Easy Crockpot Chicken and Dumplings

I must confess... we're a family of baked food eaters. We love foods prepared in the oven. Most any meat we eat; chicken, pork, beef- we bake it because we believe baked is much better than fried :) and we just like it.

A few days ago, my SIL (who is staying with us for now) was baking something, I forget what it was, and she noticed that the oven just wasn't getting as hot as it should. We hoped it was just a one time thing.

It wasn't. Our oven is going out and we can't afford to get it fixed just yet. Soooo...

We're now becoming a crockpot family. My SIL and I are making as many of our meals in a crockpot as we can.

Here's one of my family's favorites:

Easy Crockpot Chicken and Dumplings (because ya'll know I'm not a great cook and I like things that are easy to prepare :)
also... we're a big family so we double this and use 2 crockpots

4 - 6 boneless skinless chicken breast halves (cut into pieces)
2 cans of cream of chicken soup
2 cans of chicken broth
1 chopped onion (we have some in our family who don't like onion so I only add this to one of the crockpots)
2 tablespoons butter or margarine (you can use a little less if you prefer)
enough water to cover everything in the pot
salt & pepper to taste (i use lemon pepper seasoning also)

FOR THE DUMPLINGS:

2 packages canned biscuit dough cut into pieces (i use the jumbo packages because we like a lot of dumplings)

Place chicken pieces in bottom of crockpot. Add onions, cream of chicken soup, chicken broth, salt & pepper, butter, and water and cover. Turn crockpot on HIGH and cook for 5 hours or until chicken is tender. Add biscuit dough pieces and let cook another 30 - 45 minutes until dough is cooked through. (i like to add about 1/4 of the biscuit dough pieces earlier so that they kind of dissolve down into the broth to thicken it. i add those and then wait 30 minutes and add the rest.)

Delia, I lived without my oven for a full year and became the crockpot queen. Where were you when I needed you? To be honest I still love using my crockpot because it's so convenient and you can make yummy things.

I'm definitely copying this recipe off. Terrific!

And I'm praying you can get your oven fixed sooner than a year.

Thanks for posting this recipe, Delia. It sounds delicious and I'd like to try it. I could probably make it even healthier by using Healthy Request Cream of Chicken Soup and fat-free chicken broth.

I am SO GLAD you posted this !!!!!!

Two days ago I said to my husband, "I wish I had some chicken crock pot recipies."

I LOVE, LOVE, LOVE the crockpot because it SO easy !

So he says, "chicken and dumplings would be good."

I've never had them personally but he grew up with them and really likes them.

So I am going to try this recipe and I will let you know what my hubby thinks about it !:)
